Coconut oatmeal cookies

Today I prepared a recipe for the best oatmeal cookies my mother used to bake, when we had a sweet tooth but she wanted to give us healthier treats. The ingredients are mainly measured by cups and spoons, so it’s not just delicious but simple as well. I you don’t have measuring cups at home, a regular 2 dcl teacup would do the trick. Let’s start!  

INGREDIENTS:

  • 1 cup white spelt flour
  • 1 cup oat/spelt flakes
  • ¼ cup demerara cane sugar
  • ¾ cup ground coconut
  • ½ tsp baking soda
  • 150 g butter
  • vanilla extract
  • 2 handfuls of nuts or almonds
  • 1 bitter chocolate (at least 52% cocoa)
  • 1 handful of dried cranberries
  • 2 tbsp jam
  • 2 tbsp hot water

DIRECTIONS:

Preheat your oven to 180°C. Mix together the dry ingredients, add sugar, vanilla extract, roughly chopped walnuts, pieces of chocolate and cranberries. Melt the butter. Pour hot water with jam onto your mixture (I use my mother’s great apricot jam), add the butter and stir quickly together until you get a nice sticky consistency. If you still have dry places, add a bit more hot water. Prepare a bowl with lukewarm water, which you might use to wet your hands so the dough won’t stick to them. Use a spoon and take small portions of the mixture into your hands. Roll it into a flat circular cookie shape and put the cookies onto a baking tray lined with parchment paper. It might seem hard to shape these cookies but believe me, they will stay nicely together once baked. Don’t worry, the cookies will expand and rise during baking so don’t prepare them too thick 🙂

Bake the cookies until golden brown, at 180°C 15-20 minutes, depending on the size of your cookies. Do not overbake them, they would become hard and dry! Let the cookies cool down on the baking tray. They are soft after taken out from the oven, but they’ll become crunchy when they cool down. Enjoy the rest of the day and your healthy treats 🙂
